Gingerbread Cookies
Ingredients
- 1/3 cup unsalted butter
- 3/4 cup brown sugar
- 1 egg
- 1/2 cup molasses
- 2 teaspoons vanilla
- 1 teaspoon lemon juice
- 3 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 tablespoon ground ginger
- 1 3/4 teaspoons ground cinnamon
- 1/4 teaspoon ground cloves
Method
- Cream butter, sugar, and egg together in a stand mixer with paddle attachment.
- Add molasses, vanilla, and lemon and mix until well blended.
- In a separate bowl, mix together the dry ingredients.
- Add the dry ingredients to the butter mixture, and stir until well blended.
- Wrap dough in plastic wrap and refrigerate for at least 2 hours.
- Preheat the oven to 375°F.
- Line cookie sheets with parchment paper.
- Roll dough out on lightly floured surface until 1/4 inch thick.
- Cut cookies out and put on pan.
- Bake one pan at a time until bottoms begin to brown (7-10 minutes, longer is crispier).
- Remove from oven and cool cookies on a wire rack.
