Lemon Coconut Squares
Ingredients
- 2 cups all-purpose flour
- 1/2 cup icing sugar
- 1 cup softened butter
- 4 eggs
- 2 cups white sugar
- 1/2 cup lemon juice
- 1 tablespoon lemon zest
- 1/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 cup unsweetened shredded coconut
Method
- Preheat oven to 350°F.
- Line a 9x13 pan with parchment paper.
- Mix together 2 cups flour and 1/2 cup icing sugar.
- Add butter and mix in.
- Press into bottom of baking pan.
- Bake until set (about 20 to 25 minutes).
- Remove from oven and allow to cool a bit.
- Beat together eggs, white sugar, lemon juice, and zest.
- Gradually add flour and baking powder to lemon mixture.
- Stir in coconut.
- Pour over base.
- Return to oven and bake until set (about 20 to 25 minutes).
- Remove from oven, allow to cool, then cut into squares.
