Blueberry Apple Muffins

Ingredients

  • 1/2 cup butter
  • 3/4 cup white sugar
  • 2 eggs
  • 2/3 cup 0% greek yogurt
  • 1/2 cup water
  • 1 1/2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 4 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 3/4 cup blueberries
  • 3/4 cup chopped apples with peels

Method

  1. Preheat oven to 400°F.
  2. Line a muffin pan.
  3. Cream together butter and sugar in a stand mixer with paddle attachment.
  4. Beat in the eggs.
  5. Stir in the yogurt, water, and vanilla.
  6. In a separate bowl, stir together flour, baking powder, salt, and cinnamon.
  7. Toss the blueberries and apples in the dry ingredients until coated.
  8. Gently stir dry ingredients and fruit into the wet ingredients.
  9. Drop batter into muffin pans.
  10. Bake until the tops are dry to the touch and a toothpick inserted in the centre of a muffin comes out clean (about 20 minutes).
