Blueberry Apple Muffins
Ingredients
- 1/2 cup butter
- 3/4 cup white sugar
- 2 eggs
- 2/3 cup 0% greek yogurt
- 1/2 cup water
- 1 1/2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 4 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 3/4 cup blueberries
- 3/4 cup chopped apples with peels
Method
- Preheat oven to 400°F.
- Line a muffin pan.
- Cream together butter and sugar in a stand mixer with paddle attachment.
- Beat in the eggs.
- Stir in the yogurt, water, and vanilla.
- In a separate bowl, stir together flour, baking powder, salt, and cinnamon.
- Toss the blueberries and apples in the dry ingredients until coated.
- Gently stir dry ingredients and fruit into the wet ingredients.
- Drop batter into muffin pans.
- Bake until the tops are dry to the touch and a toothpick inserted in the centre of a muffin comes out clean (about 20 minutes).
