Ingredients
- 1/4 cup vegetable oil
- 3/4 cup 0% greek yogurt
- 1/2 cup 0% milk
- 1/2 cup brown sugar
- 1/2 cup molasses
- 1 egg
- 2 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoons ground ginger
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon ground cloves
- 1 1/2 cups finely diced sweet apples, skin on
Method
- Preheat oven to 375°F.
- Line a muffin pan.
- In stand mixer with whisk attachment, mix together oil, yogurt, milk, sugar, molasses, and egg.
- In a separate bowl, stir together flour and spices.
- Add apples to dry ingredients and stir until apple pieces are coated.
- Add wet ingredients to dry ingredients and stir gently until just combined.
- Drop batter into muffin pans.
- Bake until the tops are dry to the touch and a toothpick inserted in the centre of a muffin comes out clean (about 16 to 18 minutes).
