Ingredients
- 1 can chickpeas, rinsed and drained
- 1/2 red onion, diced
- 2-3 tablespoons olive oil
- 1/2 teaspoon salt
Method
- Preheat convection oven to 425°F.
- Line a baking sheet with parchment paper.
- In a mixing bowl, stir together all ingredients.
- Spread out on baking sheet in a single layer.
- Bake until chickpeas are crispy and onions are caramelized (about 30 minutes).
- Remove from oven and toss with any spices (if desired).
