Ingredients
- 1/2 cup unsalted butter
- 1/2 cup vegetable shortening
- 2 cups brown sugar
- 2 eggs
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 4 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup sweetened shredded coconut
Method
- Preheat the oven to 400°F.
- Line a cookie sheet with parchment paper,.
- In the bowl of a stand mixer fitted with a paddle attachment cream together butter, shortening, and sugar.
- Beat in eggs, milk, and vanilla.
- In a separate bowl, whisk together dry ingredients.
- Add dry ingredients to the mixer bowl and stir until just combined.
- Drop cookies onto cookie sheet and flatten with a floured fork.
- Bake until done (about 15 minutes).
- Cool on a wire rack.
