Blueberry Squares
Ingredients
- 2 cups all-purpose flour
- 1/2 cup icing sugar
- 1/2 teaspoon ground cinnamon
- 1 cup softened butter
- 2 eggs
- 1 cup sour cream
- 2/3 cups white sugar
- 1/4 cup lemon juice
- 2 tablespoons all-purpose flour
- 3 tablespoons corn starch
- 1 tablespoon vanilla
- 1 teaspoon ground cinnamon
- 4 cups blueberries
Method
- Preheat oven to 350°F.
- Line a 9x13 pan with parchment paper.
- Mix together 2 cups flour, 1/2 cup icing sugar, and 1/2 teaspoon cinnamon.
- Add butter and mix in.
- Press 3/4 of the base into bottom of baking pan, reserve 1/4 of base.
- Bake until set (about 20 to 25 minutes).
- Remove from oven and allow to cool a bit.
- Spread blueberries over the base.
- Beat together eggs, sour cream, white sugar, lemon juice, flour, corn starch, vanilla, and cinnamon.
- Pour over blueberries and base.
- Sprinkle reserved base dough over the filling.
- Return to oven and bake until set (about 1 hour).
- Remove from oven, allow to cool, then cut into squares.
