Ingredients
- 2 cups grape or cherry tomatoes, halved
- 2 cups cucumber, chopped to same size as tomatoes
- 1/2 red onion, thinly sliced and soaked in ice water for 10 minutes
- 3/4 cup crumbled feta
Dressing
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried parsley
- 1 teaspoon dried oregano
- salt
- black pepper
Method
- Put vegetables and feta in a salad bowl.
- Mix together dressing.
- Pour dressing over salad and toss.
