Ingredients
- 6 cups rhubarb, diced finely
- 3 cups white sugar
- 1 package strawberry Jell-o
Method
- Mix together rhubarb and sugar in a large bowl.
- Let stand overnight.
- Transfer to a large pot and bring to a simmer.
- Let simmer for 10 minutes.
- Add Jell-o, stir until dissolved.
- Bring to a rolling boil.
- Remove from heat and let sit a few minutes.
- Put in jars.
