Ingredients
- 2 cups white sugar
- 1 cup canola oil
- 2 cups all purpose flour
- 2 teaspoons baking soda
- 1/2 teaspoon baking powder
- 1 1/2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1 teaspoon salt
- 4 eggs
- 3 cups carrots coarsely grated
Method
- Preheat oven to 350°F.
- In stand mixer with paddle attachment, cream together sugar and oil.
- In a separate bowl, mix together dry ingredients.
- Mix dry ingredients into sugar mixture.
- Beat in eggs one at a time.
- Continue beating on medium speed for 5 minutes.
- Stir in carrots.
- Pour batter into 9x12 cake pan.
- Bake until toothpick inserted in centre comes out clean (about 55-60 minutes).
- Remove from oven and cool.
