Ingredients
- 2 pounds pork spare ribs
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 tablespoons hoisin sauce
- 2 tablespoons white vinegar
- 2 tablespoons rice wine
- 2 tablespoons chicken stock
- 1 teaspoon garlic chopped fine
- 1 teaspoon sugar
Method
- Trim excess fat from ribs.
- Mix together all other ingredients in a small bowl.
- Pour marinade over the spare ribs.
- Marinate for 6 hours in the fridge, turning over every hour or so.
- Move one rack in oven to very top of oven, move other rack to the very bottom.
- Put a drip tray on the bottom rack.
- Preheat oven to 375°F.
- Insert hooks into one side of each rack of ribs.
- Hang the ribs from the top rack using the hooks.
- Roast undisturbed for 45 minutes.
- Raise oven temperature to 450°F.
- Roast for 15 minutes longer.
- Remove from oven, cut into portions, and serve hot.
