Cashew Crunch Salad
Ingredients
- 1/2 head green cabbage, finely shredded
- 1/2 head purple cabbage, finely shredded
- 2 cups carrots, shredded
- 1 cup fresh cilantro, chopped
- 1/2 cup green onion, sliced
- 2 cups cooked edamame
- 1 cup roasted cashews, chopped
- 2 cups crunchy chow mein noodles
- crispy baked tofu
Dressing
- 1/4 cup olive oil
- 3 tablespoons white vinegar
- 2 tablespoons sesame oil
- 2 tablespoons sugar
- 1 teaspoon salt
- 1/2 teaspoon garlic powder
Method
- Shake together dressing ingredients.
- Toss dressing together with salad ingredients.
