Blueberry Oatmeal Muffins
Ingredients
- 1 1/2 cups quick oats
- 1 cup skim milk
- 1/2 cup brown sugar
- 2 tablespoons honey
- 1/2 cup unsweetened apple sauce
- 1 egg
- 1 tablespoon canola oil
- 1 teaspoon vanilla
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup blueberries
Method
- Preheat oven to 400°F.
- Line a muffin pan.
- Soak oats in milk for about 30 minutes.
- Mix together sugar, honey, apple sauce, vanilla, egg, and oil.
- Mix oats into the wet mixture.
- In a separate bowl, stir together the flour, salt, baking powder, and baking soda.
- Mix dry ingredients into wet.
- Gently fold in the blueberries.
- Beat in the eggs.
- Drop batter into muffin pans.
- Bake until the tops are dry to the touch and a toothpick inserted in the centre of a muffin comes out clean (about 22-24 minutes).
