Pumpkin Muffins
Ingredients
- 1 3/4 cups all purpose flour
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ground cloves
- 1/2 teaspoon salt
- 1/3 cup unsalted butter
- 1 1/3 cups brown sugar
- 2 eggs
- 1 1/3 cups pumpkin puree
- 1 teaspoon vanilla extract
Method
- Preheat oven to 350°F.
- Put liners in muffin pan.
- Mix the dry ingredients together.
- Cream the butter and sugar together using stand mixer with paddle attachment.
- Beat eggs into butter mixture.
- Beat pumpkin puree and vanilla into butter mixture.
- Add the dry ingredients to the butter mixture, stirring until just mixed.
- Spoon the batter into the muffin cups.
- Bake until a toothpick inserted in the centre of a muffin comes out clean (about 18-22 minutes).
