Ingredients
- 1 1/2 cups all-purpose flour
- 1/3 cup white sugar
- 1/2 cup brown sugar
- 1 tablespoon cinnamon
- 1/2 teaspoon ginger
- 3/8 cup butter
- 1/2 cup pecan pieces
- 1 egg
- 2/3 cup buttermilk
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
Method
- Preheat oven to 350°F.
- Line a 9x9 pan with parchment paper.
- Stir together the flour, sugars, and spices.
- Cut the butter into the flour mixture.
- Remove 2/3 cup of the flour mixture and set aside.
- Stir pecans in to main mixture.
- Beat eggs in, while beating, gradually add buttermilk.
- Continue beating the batter until it is light and smooth.
- Stir in baking powder and baking soda.
- Pour into pan.
- Top with 2/3 cup crumb mixture.
- Bake until a toothpick inserted in the centre comes out clean (about 25 minutes, careful: will fall easily).
