Ginger Molasses Cookies
Ingredients
- 3 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon ginger
- 1 teaspoon cinnamon
- 1/2 teaspoon allspice
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, at room temperature
- 1 cup brown sugar
- 2 egg whites
- 1/4 cup corn syrup
- 1/4 cup molasses
- 1/3 cup coarse sugar
Method
- Preheat oven to 350°F.
- Line a baking sheet with parchment paper.
- In a large bowl, whisk flour with baking soda, ginger, cinnamon, allspice and salt.
- Using a stand mixer with paddle attachment, cream butter with brown sugar.
- Mix in egg whites.
- Beat in corn syrup and molasses.
- Gently stir in flour mixture in two additions.
- Using a standard ice cream scoop, scoop 12 cookies and roll into balls.
- Roll in coarse sugar, and place 2 inches apart on a baking sheet.
- Bake until done (about 12-14 minutes).
- Repeat steps 8-10 for remaining dough.
